Comments:	Produced with carefully selected Sangiovese grapes, with the addition of small quantities of Alicante, Merlot and Cabernet Sauvignon grapes. The grapes are pressed separately and are let macerate for a period of 21 to 28 days, according to the variety. After mixing the varieties the wine is aged for 14 months in small French oak barrels called carati. During this period the malolactic fermentation takes place and the wine is decanted frequently. Before being released it is aged six more months in the bottle. Il Tempio is a wine which does not undergo any stabilization or clarification process, in order to maintain the character and flavor of the product intact. Perfect to pair traditional Tuscan recipes, in particular game based dishes and aged cheese.
